Penne À La Vodka

‘You Won’t Be Single For Long’
  • 1 T. extra-virgin olive oil
  • 1 T. butter
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • ½ medium onion, chopped
  • 1 cup vodka
  • 1 cup chicken stock
  • 28-oz. crushed tomatoes
  • 16-oz. penne rigate
  • ½ cup heavy cream
  • chopped fresh basil
  • salt and pepper
  1. Heat a large skillet over medium heat. Add oil, butter, garlic, shallots, and onions. Gently sauté shallots for 3 – 5 minutes to develop their sweetness.
  2. Add vodka to the pan and reduce by half, about 2 – 3 minutes. Add chicken stock and crushed tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season to taste.
  3. While sauce simmers, cook pasta in salted boiling water until al dente.
  4. Stir cream into sauce. When sauce returns to a bubble, remove from heat. Toss hot pasta with sauce and basil leaves.
