Pineapple Teriyaki Salmon

Pineapple Teriyaki Salmon
Serves: 3-4
  • 2 T. brown sugar
  • 2 T. soy sauce
  • zest from 1 orange
  • 1 (6-oz.) can pineapple juice
  • 2 t. canola oil
  • 4 (6-oz.) salmon filets
  • salt and pepper
  1. Preheat oven to 400° F.
  2. Combine brown sugar, soy sauce, orange zest, and salt in a small saucepan over high heat. Bring to a boil, reduce heat, and simmer until reduced to about ¼ cup, approximately 15 minutes. Set aside.
  3. Heat oil in a large, non-stick skillet over medium-high heat. Sprinkle salmon filets with salt and pepper. Add fish to pan, cook 3 minutes.
  4. Turn fish over and place in oven, bake for an additional 3 minutes. Remove from oven. Brush each filet with pineapple teriyaki sauce. Return to oven and cook one more minute or until fish flakes easily when tested with a fork.
  5. Serve with rice.
