Cornflake Chicken

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 ½ cups cornflakes, crushed to ¾ cup crumbs
  • 2 T. margarine, melted
  • 2 T. lemon juice
  • ½ t. salt
  • ¼ t. pepper
Directions
  1. Preheat oven to 375° F.
  2. In a bowl, combine melted margarine, lemon juice, salt, and pepper.
  3. Dip each piece of chicken in the margarine-lemon juice mixture, and then in crumbs.
  4. Placed coated chicken pieces on a greased baking sheet or dish, arranging them so they do not touch.
  5. Bake 45 minutes.
