- 4 boneless, skinless chicken breasts
- 1 ½ cups cornflakes, crushed to ¾ cup crumbs
- 2 T. margarine, melted
- 2 T. lemon juice
- ½ t. salt
- ¼ t. pepper
- Preheat oven to 375° F.
- In a bowl, combine melted margarine, lemon juice, salt, and pepper.
- Dip each piece of chicken in the margarine-lemon juice mixture, and then in crumbs.
- Placed coated chicken pieces on a greased baking sheet or dish, arranging them so they do not touch.
- Bake 45 minutes.
