Baked Teriyaki Chicken

Ingredients
  • 1 T. cornstarch
  • 1 T. cold water
  • ½ cup white sugar
  • ½ cup soy sauce
  • ¼ cup cider vinegar
  • 2 cloves garlic, minced
  • ½ t. ground ginger
  • ¼ t. ground black pepper
  • 12 chicken thighs OR 4 chicken breasts, chunked
Directions
  1. Preheat oven to 425° F.
  2. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, cider vinegar, garlic, ginger, and pepper. Let simmer, stirring frequently, until sauce bubbles and begins to thicken.
  3. Place chicken in a lightly greased baking pan. Pour the sauce over the chicken.
  4. Bake for 30 minutes, turn chicken pieces over, and bake another 30 minutes or until done.
