Braised Balsamic Chicken
Serves: 6
  • 6 chicken breasts, halved
  • ground black pepper
  • 1 t. garlic salt
  • 2 T. olive oil
  • 1 onion, thinly sliced
  • ½ cup balsamic vinegar
  • 14-oz. canned diced tomatoes
  • 1 t. dried basil
  • 1 t. dried oregano
  • 1 t. dried rosemary
  • ½ dried thyme
  1. Season chicken breasts with the ground black pepper and garlic salt.
  2. Heat olive oil in a medium skillet, and brown the chicken breast halves with the thinly sliced onion.
  3. Pour tomatoes and balsamic vinegar over the chicken and season with the basil, oregano, rosemary, and thyme. Simmer until chicken is no longer pink and juices run clear, about 15 minutes.
